Yes. The mail comes *from* the person who made the dropoff, not a fixed
arbitrary (and useless) address. So the problem will be your mail relay
accepting mails coming from people who leave dropoffs, who may not be
users at yourdomain.com. So check that your mail relay will accept mail
coming from your IP addresses as well as mail coming from users who are
@yourdomain.com.
The first thing I checked was the sendmail log locally, I see
notations in the sendmail log for the email going out for confirmation
emails from anonymous dropoffs.
Nothing for notifications on newly dropped off files.
My access file allows all local relaying
Connect:localhost.localdomain RELAY
Connect:localhost RELAY
Connect:127.0.0.1 RELAY
For example here is the sendmail log on an anonymous dropoff:

That was the email that went out to brianmduncan at gmail.com for
the confirmation, after I drop off the file, there is no attempt to send
another email out through sendmail.

It happens when you call the 2 rrd scripts too close to each
other.
Your root crontab should say this, so they stay well apart from
each other (they were on the same command-line in earlier releases by
mistake):
5 0 * * * root /usr/bin/php /opt/zendto/sbin/cleanup.php
/opt/zendto/config/preferences.php
2 10 * * * root /usr/bin/php /opt/zendto/sbin/rrdInit.php
/opt/zendto/config/preferences.php
2 12 * * * root /usr/bin/php /opt/zendto/sbin/rrdUpdate.php
/opt/zendto/config/preferences.php
